Where does Solaire go after Lost Izalith?

When you reach Lost Izalith and go to the Chaos Bug area Solaire will not be there. Dispose of the bugs and return to Anor Londo and he should still be at the bonfire by the spiral stairs. Speak to him here, then the bonfire right after Centipede Demon.

What happened to Solaire?

Miyazaki has stated that Solaire being taken over by the Sunlight Maggot, was intended as “the general norm”, but that if Solaire is kept alive and fights alongside the player for the last boss, it is the “happiest ending”, as he links the flame in his own world and dies by “becoming the Sun”.

Nothing happens. You don’t summon the “real” him. It’s more like you summon a version of him from a particular timeline or something.

Why did Solaire go insane?

Unlike other Undead characters, Solaire is not a Hollow when he attacks the player in Lost Izalith; his apparent insanity seems to be either induced by the Sunlight Maggot or by his desperation to find his goal resulting in him wearing it.
